2 cups sugar

1 cup water

1/2 lemon, juiced and strained

a few drops pink food colouring

90 ml rose water
Enough for 10 glasses.
- Place the sugar and water in a saucepan and stir over a medium heat to dissolve the sugar. As soon as the sugar has dissolved, bring the mixture to the boil and add the lemon juice. Do not stir but allow to simmer for 10 minutes.
- While simmering, add the food colouring – the syrup should have a deep pink colour (which will dilute when mixed with water.) Add the rose water and boil for a further three minutes. Remove from the heat and allow to cool.
- To serve, place two to three tablespoons of the syrup, depending on how sweet you like it, in a glass, add crushed ice and top with either sparkling or still water.
