KIWI AND CHIA POPSICLES

A guilt-free and healthy snack for hot weather! You can use berries or peaches instead of the kiwi. Honey is used as a sweetener instead of sugar. You can replace the honey with maple syrup to make vegan popsicles.

125ml chia seeds
500ml Coconut milk or almond milk
40ml honey or maple syrup
4 kiwis peeled and sliced thinly

(Makes about 10)

METHOD:

  • Soak the chia seeds in the coconut milk and honey for at least an hour (until thick). Stir well.
  • Fill the popsicle moulds with layers of the kiwi and chia mixture, insert sticks, and place in freezer for at least 4 hours or overnight.
  • Unmould and enjoy on a hot day.
