(Serves 4)
METHOD:
- Place the frozen raspberries, honey and egg white in a food processor and process until light and fluffy. This may take a few minutes.
- Work fast and spoon the soft serve into a piping bag fitted with a plain or star nozzle, and pipe into 4 serving glasses.
- Garnish with fresh raspberries and mint.
