  • Lemon And Lime Curd

Serves 8

TO MAKE THE LEMON AND LIME CURD:

  • Mix the cornflour with a little of the lemon juice then add all the ingredients in a small saucepan.
  • Heat on very low heat whilst stirring and just bring to the boil. Remove from the heat and strain the curd through a sieve into a clean bowl.
  • Cover with cling wrap and cool completely.

TO ASSEMBLE:

  • Spoon blobs of the whipping cream on a large platter and top with meringues.
  • Add the citrus segments and drizzle with the lemon and lime curd. Add some of the marmalade sauce and dust with icing sugar.
  • Finish off with crushed meringue and citrus zest.
  • Alternatively you can assemble the dessert in small jars by layering the ingredients.
