Baked Prawns With Lemon And Feta

Serves 4

  • Preheat the oven to 200°C.
  • Toss together the prawns, tomato, lemon juice and zest, olive oil, garlic, chili, oregano and salt and pepper.
  • Tip into an ovenproof dish/pan and add the chunks of feta.
  • Baste with some of the pan juices and bake in the oven for ±25 minutes until the prawns are cooked and the cheese starts to brown.
  • Scatter over the parsley and serve with crusty bread.
