400 g large raw, peeled prawns with tails on

150 g Roma tomatoes, cut into halves or quarters

30 ml lemon juice

1 Lemon, Zested

40 ml olive oil

2 garlic cloves, crushed

2,5 ml dried chilli flakes

5 ml dried oregano

to taste pinch of salt and pepper

200 g feta cheese, broken into chunks

Chopped Italian parsley
Serves 4
- Preheat the oven to 200°C.
- Toss together the prawns, tomato, lemon juice and zest, olive oil, garlic, chili, oregano and salt and pepper.
- Tip into an ovenproof dish/pan and add the chunks of feta.
- Baste with some of the pan juices and bake in the oven for ±25 minutes until the prawns are cooked and the cheese starts to brown.
- Scatter over the parsley and serve with crusty bread.
