SALAD

20 g chopped fresh mint

50 g Chopped fresh coriander

1 Chopped jalapeno

75 g finely chopped salad onions

200 g Mung bean sprouts

5 avocado peeled and into cubes

3/4 cup peanuts

romaine lettuce leaves, to serve

Dressing
-
70 ml Fish sauce
-
100 ml Lime juice
-
4 tbsp Brown Sugar
-
1 tbsp tamatiestraat cheeky chilli sauce
Serves 6-8 as a side salad.
- Prepare all the ingredients as described above.
- Combine all the salad ingredients in a bowl, except the lettuce leaves. Keep that aside in a separate bowl.
- Prepare the salad dressing – taste and adjust if needed.
- Mix ½ of the of the dressing through the salad and reserve the rest to serve at the table with the lettuce leaves as “wraps”.
More suggestions:
- Prepare deboned chicken thigh pieces on the braai or in in the air fryer to make this a wonderful Asian style chicken salad. Add a garlic bread and it is a fully rounded meal.
- This salad is also a wonderful accompaniment to barbequed fillet or lamb spiced with garlic & ginger.
